A New Recipe!

I have been feeling a little overwhelmed with meals lately. It seems like everything is decided last minute. We end up just cooking something quickly, and often I don't have the ingredients I need to make what I want. I find this very frustrating.

I used to plan meals all the time. This past weekend I decided to give it a try again. I found a website that gave suggestions and recipes. This pasta salad caught my eye. I tried it out, and it was delicious.

Garden Fresh Pasta Salad
  • 1 box(es) Bowtie Pasta
  • 20 slices Cherry Tomatoes
  • 1 cube Bell Pepper
  • 1 jar Sun-dried Tomatoe Dressing
  • 1 head Broccoli
  • ½ cups Fresh Parsley
  • ½ cups Grated Parm. Cheese
Cook pasta according to directions. Add broccoli heads 5 minutes before pasta is done and drain. In large bowl, combine cooled pasta and broccoli, sliced tomatoes, bell pepper, and fresh parsley together with dressing. Let sit overnight. Right before serving, add your grated parm. cheese and mix well. GREAT for a summer picnic..because there’s nothing to spoil like mayo, etc.!
Add-ins: sliced pepperoni, cubed cheese, black olives, feta cheese, cubed salami, the list is endless. You can even use italian dressing for a different flavor. You can really add any fresh veggies from your garden that you grow!

  4. I used to do the menu planning thing too, but have gotten away from it. This recipe sounds delish. What website did you visit to motivate you?

  6. I found this recipe while searching this blog http://orgjunkie.com/. She has a tab at the top that says 'menu planning Monday' where she lists the recipes she uses. I don't like all of them, but it gives me some new ideas.
